Freeze-dried vs Spray-dried

Spray dried is the most common method for drying milk. It’s fast, and it’s cheap. It also puts the raw product through high processing temperatures and extreme force.. Higher temperatures of spray-drying can result in overall losses in taste, nutritional value, and proteins degeneration. 

Freeze drying is a longer, slower process and costs more. But it is also a whole lot gentler and it retains nutritional value better than any other drying method.

Allergies and Intolerances 

Camel’s milk contains A2 proteins while most cow’s milk contains A1. A2 is easier to digest for those who have milk intolerance. Generally speaking, A2-containing milk is safer and healthier. Furthermore, camel milk contains higher concentrations of L-lactate, which experts suggest can be the reason why individuals with lactose intolerance are able to easily digest camel milk.

In a study conducted on children with Cow’s Milk Allergy (CMA) using skin prick tests, they did a comparison between reactions to goat’s milk and camel’s milk. Conclusion: Camel’s milk is the safer choice between the two. 18.4% of the children tested positive (had reactions) with camel’s milk vs 63.2% who tested positive (had reactions) to goat’s milk.
